
I broke my foot recently, so exercise has been sparse, especially since it’s been housed in a stunningly stylish and not at all clunky air cast. After a few weeks of self-imposed woe-is-me mentality, I’ve decided to change my mind set!
Given that the first few weeks of my disablement I sat on the couch eating chocolate and trying to limit movement, I’m feeling sluggish and highly unmotivated. Food has such a huge impact on you mentally and physically, and I’m going to focus on a nutrition plan mainly focus on keto principles and intermittent fasting.
Luckily, the foot is getting better each day, and I’ll be adding exercise to my attempt at a keto diet… not sure on the fasting yet – I love to eat. Well, keto-esque attempt.
I’m not sure if I’m going to follow it to the tee… my goal it to apply the major principles of keto and not punish myself if I have an off moment or two #SelfLove. I’ll write more about keto as I start to understand it better and have made some progress.
For now, recipe numero uno: bacon wrapped zucchini skewers. The main ingredients: Zucchini and Bacon!
Zucchini’s are on the approved list of keto veg, and are punch full of a ton of vitamins including: B6, C and K. Low in cals (avg. of 33 cals per unit) and high in anti-oxidants, this summer friendly vegetable is versatile, tasty and super easy to make.

The second item: bacon, is apparently the secret ingredient of all keto meals, as it’s incredibly high in fat… I’ll take it! I generally use a leaner, salt reduced cut of bacon, but you can use whatever you’ve got.
Add some olive oil, spices, S&P and garlic, and you’ve got yourself a low call meal/ snack/ appetizer/ munchie food.

I added minced garlic, garlic salt, chili powder and red pepper flakes and topped it all off with some EVOO. Zucchini is so versatile that you can play around with the spices and come up with a flavor that tickles your taste buds!
These delicious skewers are simple to make, high in nutrients (and fat!) and incredibly tasty.

I generally cook for two, but if you need to make more, keep doubling the recipe as needed, it works well.

Keto Bacon Zucchini Skewers
Prep Time: 5 mins Cook Time: 35 Mins Total Time: 40 Mins Number of servings: 2 Calories/serving:106.5
Ingredients
- 1 Zucchini, cut into 4 strips
- 4 slices of bacon
- 1 tbsp EVOO
- 1 tsp garlic salt
- 1 tsp chilli powder
- ½ tsp red pepper flakes
- 1 clove minced garlic – you can also use garlic powder (1 tsp)
- S&P to taste
Instructions
- Heat oven to 350 degrees. Line baking sheet with foil.
- Place zucchini into a large mixing bowl, sprinkle with the olive oil, garlic/garlic powder, garlic salt, chili powder, red pepper flakes and S&P. Toss to coat well.
- Wrap a bacon slice around each piece of zucchini and place into prepared tray, skin down
- Bake for 35 mins
- If you want crispier bacon, broil for the last 3-5 mins.
